Grilled vegetables and mushrooms

Here's a simple and tasty recipe for grilled vegetables and mushrooms:

Grilled Vegetables and Mushrooms

Ingredients:

  • 8 oz (225 g) fresh mushrooms (cremini, button, or portobello), cleaned and halved or sliced
  • 1 zucchini, sliced into rounds
  • 1 bell pepper, cut into strips (any color)
  • 1 red onion, cut into wedges
  • 1 cup cherry tomatoes
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano (or Italian seasoning)
  • Salt and pepper to taste
  • Fresh herbs (like basil or parsley) for garnish (optional)

Instructions:

  1. Prepare the Vegetables:

    • Clean the mushrooms and slice them if necessary. Slice the zucchini, bell pepper, and red onion. Leave the cherry tomatoes whole.
  2. Make the Marinade:

    • In a large bowl, whisk together the olive oil, minced garlic, oregano, salt, and pepper.
  3. Toss the Vegetables:

    • Add all the prepared vegetables and mushrooms to the bowl with the marinade. Toss until everything is well coated.
  4. Preheat the Grill:

    • Preheat your grill (or grill pan) to medium-high heat.
  5. Grill the Vegetables:

    • Place the vegetables on the grill. If you're using a grill basket, it can help prevent smaller pieces from falling through. Grill for about 8-10 minutes, turning occasionally, until they are tender and have nice grill marks.
  6. Serve:

    • Remove the vegetables from the grill and transfer them to a serving platter. Garnish with fresh herbs if desired.

These grilled vegetables and mushrooms make a great side dish or can be served as a main course with grains or pasta. Enjoy! Let me know if you have any questions or need variations!
